I have been baking this morning. The kids are home from school on a weekday and they are crying in their rooms as I write this post.

Something you don’t know about me is that I have been searching for years…and I mean years to find a pad thai sauce that could even slightly compare to take-away pad thai.
I have tried powders, sauces, recipes from scratch.
I have bought tamarind puree, shrimp paste and other such items in order to recreate the Thai-take away experience at home.
Alas, to no avail.

I would unofficially call these ‘adult cookies’ if I could.
They are so chunky and full of wonderful ingredients and yet my kids don’t really like them that much. Even though they contain chocolate.
I guess it’s the oats,coconut, sultanas and nuts that get in the way.
I must admit this could be one of my absolute favourite cookie recipes.
However, it does contain a lot of ingredients, which usually puts me off. But these little beauties are worth all the trouble.
