Simnel Cake

I know. It’s a fruit cake. So what.

But, I just thought I’d share this recipe for Simnel Cake (not JUST fruit cake) as I have never heard of it before and it’s really very nice. It’s apparently an Easter tradition (or a Mother’s Day Tradition – depending on the citation) here in the UK that originates from the middle ages. My adventures writing for Foodepedia have taken me to all corners of London, trying food and meeting people that I would never otherwise meet, including Michelin starred chefs and fellow food bloggers. Pork Scratchings

They’re not big in Australia, but in England pork scratchings or pork rinds, are everywhere. There are at least ten different brands that sell actual pig skin and even more brands that sell pork-crackling-flavoured snacks. One of these bacon-flavoured crispy snacks that I rate highly here are called Frazzles. I had to laugh because I always buy pork snacks when I’m feeling frazzled – you know that whole food as reward mentality – I’m really big on that.

Fog and Flowers

It’s been really foggy these last two mornings. It makes me feel like I’m in a Famous Five novel, perfect weather for adventures!

I came across some snow-drops in a field last week on a jog that went awry. It reminded me of the house we used to own. The garden was overgrown and ugly and the place hadn’t changed since 1965.
