As promised, I am here to share my current favourite Christmas cookie – The Melting Moment. These delectable bites really do melt and crumble in your mouth and with a recipe this simple, it’s easy to make them at a moment’s notice (did you get that? did you see what I did there?) I included some hydrangeas in my photo today, because down here, the festive season occurs in the midst of summer when these beautiful plants are flowering.
Melting Moment Recipe
125g butter (softened)
1 tsp vanilla
2 tbs icing sugar
3/4 cup flour
1/4 cup corn flour
1/2 tsp vanilla
1/2 cup icing sugar
1 tsp milk
Beat the butter, sugar and vanilla until light and fluffy.
Stir in the flours till combined.
Pipe little rosettes onto a lined tray.
Bake till golden.
For the filling, simply beat all the ingredients until smooth and spreadable.
Join two sides together with a slab of filling and voila!

I double this recipe, so I have plenty to offer friends and family, or even wrap some up for gifts.
You could make red and green icing for Christmas-themed cookies.
You could probably just dollop small amounts straight onto a tray if you don’t have a piping bag, I’m sure it would be fine. The mixture would be too wet to handle too much or roll into a ball, but you could scrap little mounds from a spoon.
These look lovely if served dusted with a little icing sugar.
