At AT’s work, there are a handful serious BBQ guys…guys who know about meat, guys who build smoke pits, South Africans…you know the type. When asked where they buy their meat – the answer was unanimous: Quintessential Meats in Warfield. I don’t like to be left out of good things, especially when it involves food and so I made my way over to Warfield. It’s beautiful there. Lots of farms and horse-types, golf courses and tucked away, off a lane you’ll probably miss if you’re not careful, is Fernygrove Farm. Run by James & Charlotte Quinn, Fernygrove and Hornbuckle farm make up over 600 acres of land that the husband and wife team use to farm sheep and pigs. You can buy the meat direct from the Quintessential Meats butchery that’s on site, along with a new cafe where you can distract yourself with a piece of home made cake. The chocolate and walnut brownie is worth mentioning.
I bought up a modest selection of meat including a blood pudding, some mini chorizo, bacon, Cumberland sausage and a big juicy pork fillet, that I incidentally used in the sage-crumbed pork recipe. And I must admit that each and every item was delicious. I consider myself a discerning meat-eater, I don’t like most blood puddings, I don’t buy chorizo because I can’t get a decent one and when it comes to sausages, I put them to the test in a full English breakfast. They passed with flying colours along with the home-smoked bacon. In fact – the Cumberlands from Quintessential Meats made me weep with joy when I used one in my on-going attempts to make the perfect replica of MacDonald’s sausage and egg McMuffin. They are packed with spices and flavour. The pork fillet was also, full of flavour and worth making a trip out to the farm for. The prices are also very reasonable, considering the meat you’re buying is free range, rare-breed pork and lamb. And not least of all, James is a straight-up nice guy, always smiling, yet you can tell he and his family work hard to maintain their outstanding reputation. Great work James and Charlotte!
